Building The Love Shack

 

 

It’s hard to believe I’m writing a Blog on Thanksgiving. It’s 23 Degrees Celcius here today in Southern Ontario. The sun is shining and the leafs are just starting to change color.

Growing up in the Southern Tier of New York State, Thanksgiving comes in the end of November. In Ontario, Harvest Season and Thanksgiving both come in October.

It took me quiet of few years of living here to get use to the transition, but now with the Love Shack, it’s another transition.

This will be the second busiest weekends in Cottage Country. May is opening season and Thanksgiving weekend for many, is the close up weekend. This is the last weekend we will see some of our cottage friends until next Spring.  As the same as last year, we will miss them.

Thanksgiving is the time they say to be thankful, so I would like to look back a just a year ago. This time last year, I wrote a blog called Turkey and Long Johns. So on the humors side, my thankful goes to having heat, there will be no long johns required this year.

When I haven’t been blogging, or working, or performing wedding, we have been insulating the cottage ( that’s another blog) and of course last year we put in the Cast Iron Stove, so it’s toasty inside the cottage.

I am also thankful that I have a stove and an oven, so this year, I don”t have to cook everything at home, put it in crock pots and take it up to the cottage.

I am also thankful that we will be going up for the weekend, not driving home every night.

This weekend is the last planned working weekend for us up at the Love Shack. We are pulling everything together.

The shower curtains have finally arrived from my Amazon order, that means I can put the bathroom together, that I am happy is completed ( yes, another blog).

This weekend we will be putting up the last of the insulation. The ceilings are done, now it’s time to do the walls.

More lighting is getting hung, and it’s time to bring in the summer furniture and take down the dining tent. So that’s the busy side.

On the relaxing side, the kids are coming up and my daughter in-law, Karen, is coming to help me cook dinner for the family.

The days will be busy and the nights will be a fire and some movies on the DVD player, remember no cable or internet is allowed at the Love Shack.

I am hoping to get out and shoot some pictures, the lake is pretty in the Fall. I have also packed my KOBO, I have some books I have been planning on reading for a while.

And for something special, I’m planning on making Pumpkin Cheese Cake and Sissy’s Pumpkin Soup.

This recipe was given to me by my BBF. A few years ago at our Annual Halloween Dinner Party, she made this soup and every one loved it.

I have been asked for her recipe many times and confess to not knowing what I did with it. And then, luck came, a few hours ago, I found it. So for the kids and husband who loved her soup, for the guest at the dinner party who are still talk about that soup and for my bloggers who want to really impress someone this Thanksgiving, I’m sharing  the recipe for Sissy’s Pumpkin soup.

 

 

Sissy’s Pumpkin Soup

1 796 ml can of pumpkin puree

1 900 ml box vegetable stock

1 large can evaporated milk

8 oz cream cheese at room temperature

To taste:  Pumpkin spice

Cinnamon

Nutmeg

Place all ingredients into a good size cooking pot.

Stirring occasionally for cream cheese to melt.

 Simmer over Medium Heat. Do not allow to come to a boil.

Serve and Enjoy.
