I’m a soup lover. And once upon a time, I used to love Campbells Vegetable Soup, until they changed the recipe and destroyed my love of their soups. Once this happened I had to learn to make my own soups.
This recipe is a Ketos safe recipe, and with a minor adaptation of switching out the olive oil for cooking spray anyone on Weight Watchers can eat this soup and it will have a Zero Points count.
For me, its a just a darn good healthy soup that takes minutes to cook and is fresh. It can also be frozen and taken for with lunches and it travels well for the Cottage Road Trip too.
3 cups low sodium beef broth
1 tablespoon of olive oil
2 garlic cloves, minced
1 can of tomato paste
2 cups chopped cabbage
2 stalks of celery diced
1 yellow onion
1⁄2 cup chopped carrot
1⁄2 cup green beans
1⁄2 teaspoon basil
1⁄2 teaspoon oregano
1 teaspoon parsley
¼ teaspoon pepper
Salt to taste
Sauté onions, carrots, celery and garlic in one tablespoon of olive oil until onion is transparent.
Add broth, Tomato paste, cabbage, green beans, basil, oregano, parsley, and pepper.
Simmer for 30 minutes until all vegetables are tender. Add salt to taste once the soup is fully cooked.
